Luigi, small producer of quality EVO oil
Luigi and his wife Hilde are architects. A few years ago, they moved to the countryside, where Luigi got into olive oil to the point of enrolling in the National Register of Olive Oil Technicians and Experts. Luigi personally takes care of his 520 olive trees, producing monovarietal oils that enhance ancient and native qualities of olives, for which he has received national and international prizes and awards. He likes to call himself "agritetto".

Luigi will welcome you to the place that made him fall in love with countryside life, surrounded by nature. The century-old olive grove that you will visit surrounds the ancient watchtower and the trulli where he now lives with his family. Luigi moved there a few years ago after restoring the ancient buildings together with his wife Hilde, valorising traditional materials and shapes with an approach aimed at environmental sustainability.
Initially, during the olive grove tour, Luigi will introduce you to the wonderful plant that is the olive tree (whose DNA has the same number of chromosomes as the human body and with a great capacity to adapt, which makes it an extremely long-lived plant). He will explain you the principles of sustainable and synergic soil management and of polyconic vase pruning that respect the plant’s needs and make the olive grove more productive.
Next, getting to the heart of the olive oil tasting experience, Luigi will teach you how to appreciate the organoleptic and health characteristics that differentiate a quality EVO oil from an ordinary olive oil. He will help you distinguish its scents and explain how to pair it with different types of food.
At the end of the olive oil tasting, you will be able to enjoy the quality monovarietal oils produced by Luigi, accompanied by local bread and tomatoes from the garden. During this convivial moment, you will have time to chat with Luigi to ask him all the questions you want and find out more details about his very special journey.

The olive farm tour was a really exceptional experience. This was essentially a masterclass in the olive oil – Luigi was SO knowledgeable about the whole process and you could really feel his passion for his craft! We enjoyed the stroll through the olive groves, the grounds were beautiful, and the olive oil tasting experience was well-curated and well-explained. Claudio was excellent as a host, also! He was warm and welcoming and we’ll definitely be looking to join some of his other slow-travel experiences. Thank you for sharing this with us!!!!
We booked the olive oil tasting experience (with Luigi) as a family with one child and we have to say that it was a very interesting experience. Luigi told us a lot about his trees and the olive oil making process and the big plus here is that you talk to a local, you can ask as many questions as you want and there is no strict plan or boring video presentations so every person can improve his/her knowledge. Our son was running around in the large garden meanwhile… no problem at all and Luigi’s wife even fried some special olives for us to eat (not only oil experience hence :)).
I had a wonderful and unexpected experience with Luigi and Hilde. I discovered things about olive trees and oil that I could not even imagine in such a beautiful set up. I loved learning about the authentic and sustainable practices used by Luigi to treat his trees and produce his olive oil in an environment-friendly manner. I would recommend this experience to anyone coming to Puglia!
