Sara comes from a family with a long tradition of living in the countryside. Her grandparents raised animals and produced cheese on the same farm (in Italian “masseria”) where she still lives today. Sara runs her farm with great pride, using the original techniques taught to her by her family but also employing modern means, in a perfect blend of tradition and innovation.

Sara makes mozzarella and cheeses using whey graft, so they are basically lactose-free and therefore also suitable for those with a light lactose intolerance
Wear comfortable clothing and shoes to visit the dairy farm and participate in the mozzarella workshop
Sara will welcome you to her farm (in Italian “masseria”) surrounded by olive trees, pastures, farmland and dry-stone walls. This is where Sara grew up and learned everything she knows about cows, cheese and rural traditions. No matter what season you visit Sara’s dairy farm, you will always be impressed by the richness of nature and its colours.
At the beginning of the mozzarella making tour, Sara will walk you through her dairy farm and explain to you how she looks after her cows and bulls, a hundred head of cattle that represent the heart of her work. In fact, besides being as attached to them as if they were her own children, their well-being is essential for the quality of the milk and thus of the cheeses that Sara produces.
Moving to the mozzarella workshop, Sara will explain the various steps that she takes every day to transform freshly milked milk into delicious mozzarella, ricotta, caciocavallo and many other types of cheese. You will be able to see with your own eyes with which expert movements Sara works the “pasta filata”, which you can then shape to make mozzarella yourself, to be tasted on the spot, still warm.
The mozzarella making experience will end with a generous tasting of the fresh and aged cheeses that Sara produces at the farm, all made by hand and with the use of whey starter according to the most authentic tradition. This provides an inimitable taste to its dairy products and makes them almost lactose-free.
During the cheese tasting of the mozzarella making experience, you will have time to chat with Sara to ask her all the questions you want and learn more about her story as a breeder and artisan cheesemaker.

You know how you want a personal experience with a local? This is it! Claudio had curated the perfect cheese tasting and mozzarella experience with Sara at Caseficio Parcoppello. We met Claudio at Sara’s farm and caseficio, where we were treated to a tour and cheese making experience that was informative and interesting . We met Sara’s cows, who together produce the amazing, fresh cheeses that we got to try afterwards. We were delighted to sit down to a generous tasting of mozzarella, caciocavello, ricotta, and even Sara’s take on buratta (WAY better than any I’ve ever had!) I would definitey recommend this experience to another family, as our children (6 & 2) were able to enjoy the experience, tour, and especially the tasting. Claudio thoughtfully translated for us as Sara allowed us to see the inner workings of her life’s passion; and as she is a small-batch, local cheese maker, we felt like insiders. My family and I were thoroughly impressed and pleased by this experience, as even when my younger son had a little fall, Claudio aided us in securing the nearest pharmacy for care. Highly, highly recommend.
A wonderful experience in an artisanal cheese factory in the heart of Puglia. Seeing how you get from a bucket of milk to a finished cheese is incredibly fascinating. Kudos to Claudio for the idea and for the organisation. The cheese tasting and mozzarella experience is recommended for those who want to discover the real Puglia, away from mass tourism.
An experience I highly recommend. Becoming part of the world of Sara and her cows is a unique experience. We spent a wonderful day in contact with the animals and with the fantastic people who allowed us to immerse ourselves into their world thanks to the passion they have for what they do. Not to mention the preparation of the mozzarella and the abundant cheese tasting and mozzarella experience of 0 km products, among the trees and surrounded by nature!
