His artistic flair soon met his passion for desserts and chocolate, which over time he learnt to shape and reinvent over time thanks to his training and creative talent. Italian Pastry Champion in 2005, twice third at the World Championships in Luxembourg, Francesco has now set up his own artisan chocolate and pastry workshop, where he experiments and creates delicious desserts. His research focuses on enhancing the purity of flavours.

1. Ricotta cheese cake: the cake that perfectly enhances the taste of fresh ricotta cheese, with a shortcrust pastry base, flavoured with spices and sour cherries in syrup; you will learn to dose the ingredients with “mastery and elegance”, the secret is all there
2. Chocolate and olive oil cake: the flagship cake of a chocolate confectioner can only be a chocolate cake; you will learn how to choose the chocolate, flours and fats that go best together for a cake that enhances the poetry of the true taste of chocolate and beyond...
3. Innovative dessert with chocolate and fruit: simple and quick solution for single portions to prepare at home, when a seasonal ingredient such as fruit can be eaten not only fresh but also in combination with chocolate; you will discover the different textures of chocolate with surprising contrasts
The modern pastry class is suitable for people with celiac condition, as no wheat derivatives are processed in the workshop for the sake of quality and lightness of all the products, and it can be adapted for people with lactose intolerance and vegans
This is a beginner’s pastry course, all the tools that you will need will be provided by the chef

Francesco will welcome you into his artisan pastry and chocolate workshop, where he brings his delicate and delicious creations to life. The uncluttered style and soft but firm tones reflect Francesco’s personality and enhance the infinite shapes and colours of his sweet products.
At the beginning of the pastry class, Francesco will tell you about his journey as a pastry chef. He will then talk to you about the desserts that you will be making together, showing you the ingredients that you will be using and preparing you for an unforgettable multi-sensory journey.
Now in the middle of the modern pastry experience, Francesco will guide you through the preparation of the dessert that you will have chosen. These are all simple preparations that you can repeat at home, thanks to Francesco’s recipe guide. Don’t forget to let us know well in advance which of the options listed above you would like to select, as well as any allergies, intolerances or other requests you may have. All menus are suitable for coeliacs and can be adapted for lactose intolerants and vegans.
In the waiting times during the cake preparation, you will be able to taste the single ingredients used. The pastry cooking class will end with the tasting of the cake prepared together. You will then have time to chat with Francesco and ask him all the questions you want to learn more about his story as a pastry chef and chocolatier.
